Discovering the Oil Mill

The mill with millstones and a 5,000 kg crusher – This is the mill used by ancient oil masters, using millstones, stone wheels that crush the olives using mechanical pressure. The mill's new malaxers operate at a controlled temperature and with reduced oxygen intake.
The pitting machine – The modern pitting technique involves pre-separating the pit to process only the olive pulp. Once washed, the olives are placed in the pitting machine, which removes the stones and passes the pulp directly to the malaxer.
The quality of our extra virgin olive oil is achieved through a safe and standardized process throughout every stage of the production chain, starting with the careful selection of the first harvest. For our oil, we choose only the best olive varieties in Basilicata, including the Ogliarola del Bradano, the Maiatica di Ferrandina, and the Coratina di Lavello, which are grown in our collection centers in Montescaglioso, in the province of Matera.
