• Shape: They appear as flattened, slightly concave and oval-shaped discs of pasta, which are reminiscent of a cross between orecchiette (but larger) and cavatelli.
• Ingredients: The traditional dough requires only a few simple ingredients: durum wheat semolina and warm water, sometimes with the addition of a pinch of salt. Our strascinati are flavored with crusco pepper powder.
• Preparation: They are made by hand, dragging small portions of dough onto a wooden pastry board (which helps absorb moisture and dry) using your fingers, usually two or four, depending on the desired size.
