Products and Gifts
What is denocciolato (pitted) olive oil?
It is an extra virgin olive oil obtained from the flesh of the olives only: the olives are gently pitted and sent straight to the malaxer. It was born from a research project started in 2004 by Frantoio Pace with the University of Basilicata and the University of Naples Federico II. It has a rich, balanced taste with a fruity aftertaste, notes of fresh grass and a pleasant hint of pepperiness. Learn more on the Il Denocciolato page.
Which oil should I choose?
It depends on the taste you are looking for:
- Fruttato (Fruity): fruity and sweet, from Ogliarola and Coratina olives.
- Piccante Equilibrato (Balanced Spicy): from Coratina olives, bitter with notes of artichoke and herbs, spicy on the finish.
- Denocciolato (Pitted): rich and balanced, with a fruity aftertaste.
- Gran Gourmet: lightly fruity and herbaceous, sweet.
- Delicato olive oil (Delicate): sweet and delicate, for raw and cooked use, gentle cooking and neutral dishes. It is also the oil we recommend for frying.
- Saporito olive oil (Flavourful): with over 50% extra virgin, with a taste close to an extra virgin.
- Gustoso pomace olive oil: a mellow taste.
You can find all our products on the Extra Virgin Olive Oil page.
How should I store the oil and how long does it last?
Store the oil in a cool, dry place, away from light and heat sources. If stored correctly, the product expires 18 months after the packaging date: look for "Best before..." on the pack.
If you use the tins, do not pierce the bottom before you have finished the tin, and do not decant into clear glass bottles if the oil is not going to be used straight away. To find out more, read the article Expired extra virgin olive oil.
How do gift boxes work?
Gift boxes come in a box marked "Confezione regalo" (gift box). You can add a card with a personal dedication, handwritten, and you can ship directly to the recipient, who receives the gift. Write the dedication in the Order note field in the cart. To have the gift arrive before Christmas, order by 15 December. Discover all our gift boxes.
How can I find out about allergens?
Allergens are shown on the label and on each product page. If you have any doubt, you can ask us directly in the website chat (the WhatsApp icon at the bottom) or call the toll-free number 800 800 860 (from abroad: +39 0971 644111).

Learn About Olive Oil
What are the benefits of extra virgin olive oil?
Extra virgin olive oil is a natural food, rich in monounsaturated fats and in substances such as polyphenols and vitamin E. You will find a complete guide in our article Olive oil and health: 10 benefits of extra virgin olive oil.
How is extra virgin olive oil made?
The olives are harvested and processed at the mill within 24 hours: they are washed, crushed and malaxed cold (not above 27 °C). Then the decanter separates the oil from the pomace and water, and the oil is stored in stainless steel silos before packaging. For details, read the article Olive mill: what it is and how it works.
What is the difference between extra virgin olive oil, olive oil and pomace oil?
Extra virgin olive oil is obtained directly from olives using mechanical processes only, with maximum acidity of 0.8% and no sensory defects. Virgin olive oil has maximum acidity of 2%. Olive oil, instead, is a blend of refined oil and virgin oil, with maximum acidity of 1%. Olive pomace oil is obtained from the pomace, the residue left after pressing. To find out more, read the article Difference between olive oil and extra virgin olive oil.
What is pomace?
It is a by-product of the extraction process, made up of the fruit skins, residues of pulp and fragments of stone, from which residual oil can still be extracted.
What is oil acidity and what does it tell us?
Acidity is the percentage of free fatty acids (expressed in g of oleic acid) in 100 g of oil. It cannot be tasted, only measured through laboratory analysis, and it is an indicator of quality: generally, the lower the acidity, the better the quality. However, low acidity does not automatically guarantee good flavour: that is why a tasting by expert tasters is also needed.
What do "first cold pressing" and "cold extracted" mean?
These are wordings that can appear on the label of virgin and extra virgin oils. "First cold pressing" means an oil obtained below 27 °C with a first mechanical pressing of the olive paste, with traditional presses. "Cold extracted" means an oil obtained below 27 °C by percolation or centrifugation, with modern plants. In both cases the low temperature helps preserve the aromas.
How can I recognise a good extra virgin olive oil?
Quality depends on several factors: the olive cultivar, the farming technique, the growing environment, the time of harvest, processing and storage. It is assessed with laboratory analysis and with the tasting of a panel of expert tasters, following an official method. To choose an oil you like you do not need a panel: just taste it. It is always better to consume the oil of the current harvest, because over time it loses its qualities.
What do fruity, bitter and pungent mean? Is the tickle in the throat normal?
These are the three positive attributes of a good extra virgin olive oil. Fruity recalls healthy, fresh fruit; bitter is typical of oils from green or turning olives; pungent is a sharp sensation, especially in the throat, typical of early-harvest oils from still-green olives. The tickle is not a defect: it depends on the oil's polyphenols and on how ripe the olives were.
Is colour an indicator of olive oil quality?
No. Colour can vary across a wide range of shades, from bright green to intense golden straw yellow, depending on the olive variety, the ripeness of the fruit and the prevalence of chlorophyll or carotenoids. It is therefore not a reliable indicator of the product's quality.
Why do different oils taste different?
Taste depends on the olive cultivar, how ripe the fruit was at harvest, the production area and the processing. Each oil has its own aromatic profile, a kind of fingerprint: it can recall, for example, artichoke, almond or tomato.
