The date does in fact change every year, and we'll give you the recipe for the perfect dessert for this day. So you might wonder: why does the date change? The answer is very simple: Mother's Day is celebrated on the second Sunday of May. So the exact date changes every year. The first person to speak about Mother's Day was Julia Ward Howe, a pacifist and abolitionist activist, back in May 1870 — she actually proposed establishing a Mother's Day for Peace, as a moment of reflection against war. However, her idea wasn't adopted. It was instead Anna Jarvis who first celebrated the modern Mother's Day holiday in 1908, in memory of her mother, an activist who fought for peace. Jarvis's supporters proposed to ministers and businessmen that the holiday be turned into a national day to be observed every year, and by 1911 the custom had already spread to nearly every American state. In 1914, US President Woodrow Wilson officially made it a national holiday, and from then on the custom of giving pink roses to mothers spread. Mother's Day, however, has much more distant origins. In the oldest traditions, Mother's Day was a symbol of the passage from the cold of winter to spring life, when everything is reborn. And in nearly every ancient civilization there's the presence of a Great Mother, a female deity worshipped as the bringer of life. For the Greeks it was the goddess Rhea, mother of all the gods; for the Romans, Cybele.You should know that mothers won't necessarily appreciate an expensive gift, because more than on any other occasion, what counts is the loving thought behind the gift. If you want to create something for Mother's Day, focus more on originality and meaning than on economic value. For many mothers, the most appreciated gift is time: give her an afternoon all to herself, which she could even spend at home — maybe you prepare the meals, write a note saying that on this day she won't have to do anything except treat herself to DIY beauty treatments or a marathon of her favorite TV shows.

How to celebrate it

Since we'll probably be celebrating this special occasion at home, we can make the day unique and moving by organizing a lunch together with the kids. Dad can plan a menu and get the little ones involved in preparing the recipes. The star of our recipe will be a healthy ingredient easily found in the kitchen: EVO oil. Some replace butter with it, whether for intolerances or dietary choices; others reinvent classic recipes to make them lighter, not to mention the many vegan versions of traditional desserts. But to find a good extra virgin oil dessert, there's no need to search through websites and specialty magazines: just look to the past, to recipes from a time when oil was the true star. Especially in the biscuits and dry cookies typical of the peasant culture of Central and Southern Italy: a precious ingredient like extra virgin oil was never wasted, and to save the last drops, families came up with alternative preparations. Not a substitute, then, but a main ingredient, the keystone for getting desserts that are good, fluffy and, above all, able to keep longer than those made with butter, which lose their softness faster.

Extra virgin olive oil cake

This is a fluffy cake, easy to make, with EVO olive oil — its flavor is delicate and delicious, and it's not at all greasy or heavy, so for once you can have a breakfast that's a bit different from usual. You can of course fill it too, but we recommend trying it just as it is, because it's truly wonderful!

Ingredients

  • 300 g Type 00 flour
  • 180 g sugar
  • 100 ml Olio Lucano I.G.P. — Organic Denocciolato Extra Virgin Olive Oil — 2020/2021 Frantoio F.lli Pace
  • 50 ml milk
  • 3 eggs
  • Lemon zest
  • 1 sachet of baking powder

Method

Put the eggs and sugar in a bowl and beat with an electric mixer until you get a foamy, whitish mixture. Add the milk at room temperature and keep beating with the electric mixer, then also add the extra virgin olive oil (Olio Lucano I.G.P. — Organic Denocciolato Extra Virgin Olive Oil — 2020/2021 Frantoio F.lli Pace) and gradually the sifted flour and grated lemon zest.Finally, also add the sifted baking powder and blend the mixture thoroughly. Grease a cake pan well with oil and pour in the mixture, leveling the surface well. Bake the extra virgin olive oil cake in a preheated oven at 180° for about 40 minutes. Before taking the cake out of the oven, always do the toothpick test — if it comes out dry, the cake is done. Let the cake cool completely and, if you like, dust it with powdered sugar.

Variations and tips

If you like, you can add a bit of lemon juice to make the cake even more fragrant. If you prefer, you can replace 50 grams of flour with the same amount of potato starch, and the cake will turn out even fluffier. Before taking the cake out of the oven, always do the toothpick test — if it comes out clean, the cake is done.
